The Spark
Carlos Casillas and Nick Renteria moved to Toronto together from Guadalajara, Mexico nearly 20 years ago.
Opening a restaurant had always been a shared dream.

After moving to Canada, they both attended George Brown College to study English for five years. Nick later pursued culinary arts, while Carlos studied interior design. Together, they built the foundation for what would eventually become Toronto's beloved Huevos Gourmet, a space shaped by both flavour and design.

Rooted in the bold, comforting flavours of Mexico, Huevos Gourmet honours the dishes Carlos and Nick grew up with. Handmade salsas, rich chorizo, warm tortillas, and classic Mexican brunch staples form the heart of the menu.

Over the years, Nick and Carlos's passion for travel has taken them across the globe, immersing them in diverse culinary traditions and unforgettable dining experiences. Those journeys have inspired many of the plates, cocktails, flavour profiles, and even the atmosphere that defines Huevos Gourmet.
